Awesome Pasta

  • 1 lb. ground beef
  • 16 oz. rotini pasta
  • 1 onion diced
  • 2-3 zucchini or yellow squash quartered and cut into 1/4" pieces
  • 15 oz can tomato sauce
  • 15 oz can diced tomatoes
  • 1/4 cup Parmesan cheese
  • 1 tsp. oregano
  • 1/2 tsp. basil
  • 1 tsp. thyme
  • 1 tsp. parsley
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. garlic powder
  • 1 1/2 cups shredded cheese


  • Preheat oven to 350 °F.
  • Boil water for the pasta. While the water is coming to a boil, begin browning the ground beef. Add the pasta tot he water and cook according to the package directions. When the beef is browned, add the onions and squash to saute. Cover beef with a lid to help cook the vegetables evenly.
  • Once the pasta is cooked, drain the noodles and place them in a 9x13 inch baking dish. Add the beef and vegetables  to the dish when the vegetables are soft. Add tomato sauce, diced tomatoes, Parmesan cheese, oregano, basil, thyme, parsley, salt, pepper, and garlic powder. Mix gently to incorporate all the ingredients throughout the dish.
  • Cover dish with tin foil, shiny side down. Cook for 20 minutes. Remove from the oven and take the foil off. Sprinkle cheese over the pasta. Return to the oven and cook for 5 more minutes until cheese is melted.
